Crispy Ragi Cutlets: A Calcium-Rich Healthy Snack

Looking for a nutrient-dense snack that is both delicious and wholesome? These Ragi Cutlets are the perfect solution. Made with our premium sprouted finger millet (ragi) flour, organic veggies, and pure A2 ghee, this recipe transforms a traditional grain into a kid-friendly, crispy delight.

At The Nature's Pantry, we believe in snacks that fuel the body without compromising on taste. Whether you are looking for a healthy toddler lunchbox idea or a gluten-free tea-time snack, these cutlets check every box.

Why this cutlet works?

This isn't just another vegetable patty. This recipe succeeds because it bridges the gap between nutrition and comfort food using the best ingredients.

  • The "Hidden Veggie" Trick: The earthy, nutty flavor of ragi is perfectly balanced by the natural sweetness of organic sweet potatoes and carrots, making it highly palatable for picky eaters who usually reject greens or grains.
  • Perfect Texture: Using sprouted flour adds density, while the boiled potatoes keep the interior soft and fluffy. A light coating ensures that satisfying crunch without deep frying.
  • Superior Bioavailability: We use The Nature's Pantry Ragi Flour rather than plain flour. Sprouting increases vitamin C levels and makes minerals like iron and calcium easier for the body to absorb.
  • Cooked in Pure Goodness: Unlike snacks fried in refined oils, these are shallow-fried in The Nature's Pantry A2 Gir Cow Ghee, adding a rich aroma, healthy fats, and a higher smoke point for safer cooking.
  • How to make these cutlets?

Follow this simple step-by-step guide to make these golden, crispy ragi patties.

Prep time: 10 mins | Cook time: 10 mins | Servings: 6-8 small cutlets

Ingredients

2 tbsp The Nature's Pantry Sprouted Ragi Flour

1 tbsp Fresh Curd (Yogurt) – adds probiotics

1-2 tbsp Water

½ cup Boiled, mashed potato

¼ cup Steamed, mashed sweet potato – for natural sweetness

2 tbsp Grated carrot

1 tbsp Boiled peas

Seasoning: A pinch of Himalayan pink salt and Jeera (Cumin seeds)

Outer Coating: Organic Suji (Semolina) or powdered roasted oats

Cooking Fat: The Nature's Pantry A2 Gir Cow Ghee for shallow frying

Instructions

1️⃣ Hydrate the Millet: In a mixing bowl, combine The Nature's Pantry  Ragi Flour with the curd and water. Mix well to form a thick paste. Let this rest for 5 minutes (this step is crucial to hydrate the flour and remove any raw taste).

2️⃣ Add the Organic Goodness: To the resting paste, add the mashed potato, sweet potato, grated carrot, and boiled peas. Season with salt and jeera.

3️⃣ Bind the Dough: Mix everything thoroughly by hand. The starch from the potatoes will bind the veggies and flour into a soft, pliable dough.

4️⃣ Shape & Coat: Pinch off small portions and roll them into patties or balls. Lightly coat each cutlet in suji or oats powder for that extra crispiness.

5️⃣ Shallow Fry: Heat a tawa (griddle) on medium heat. Add a little of The Nature's Pantry A2 Gir Cow Ghee and shallow-fry the cutlets. Flip gently and cook until both sides are crisp and golden brown.

Additional Benefits of these Cutlets

Why should you add these to your weekly meal plan?

🔹Powerhouse of Calcium: Ragi is one of the richest non-dairy sources of calcium, vital for bone density in growing children and preventing osteoporosis in adults.

🔹Gut-Friendly: The combination of fiber from the vegetables and probiotics from the curd aids in smooth digestion.

🔹Sustained Energy Release: Unlike sugary snacks that cause a crash, the complex carbohydrates provide a slow, steady release of energy, keeping you full and focused.

🔹Healthy Fats: Cooking with A2 Gir Cow Ghee provides essential butyric acid, which supports gut health and reduces inflammation.
